We have some new faces join our team over the past month so we thought you’d like to know a little bit about them! Please make our new team feel very welcome. 

MEET JOSH – Head Chef 

👨‍🍳️ Where have you worked before joining the team at the Coffs Harbour Golf Club?

Prior to joining the team here at the golf course, I have worked in several establishments.

Foreshores Café, Coffs Harbour (now Twenty46), Apprentice, 3 years

Bonville International Golf Course, Sous Chef & Banquets, 5 ½ years

Jonah’s Restaurant, Whale Beach, (2 Hatted Restaurant), 6 months

Café Aqua, Coffs Harbour, Head Chef, 7 years

Aanuka Beach Resort, Coffs harbour, Executive Chef, 8 years

Now that I’m here I am looking forward to the challenge of showing off my culinary skills which I hope will meet all of our members expectations

🥘 What is your favourite food to cook and why?

It’s definitely hard to pick what my favourite food is as I like to cook a diverse range of food. If I had to pick something though, I like to work with Asian flavours. I have travelled through South East Asia trying and learning about the local produce and the amazing flavours you can build using them

🐑 You can only eat one meal for the rest of your life, what is it?

Maybe because it brings back my childhood memories of living on the farm in the northern tablelands but I would have to say Lamb Roast with all of the trimmings

📝 What is your best cooking tip for our members?

Purchase fresh, quality ingredients. Your food can only be as good as your ingredients

🍽️ What is your signature dish?

I cannot say I have a signature dish as I love to experiment with food. I have a lot of dishes that I am looking forward for our members to try. One of these is my Roasted New England Lamb Rump with Honey Roasted Parsnip Puree, Mint & Pistachio Pesto & Pomegranate Reduction

What is the best piece of advice you have learnt from your mentors?

Keep it simple stupid, let the fresh ingredients do the talking

🌿 You only have 3 ingredients that you can cook with for the rest of your life, what are they?

Lamb, Mint & Rosemary

💖 What is your favourite special occasion to cook for?

It may sound a little cheesy but Valentine’s Day as I like to show case my love for food on the day of love

🌶️ What is your favourite food to cook and why?

It is really hard to name my favourite food to cook because there are many meals that I enjoy cooking. If I had to choose, I would say I love to build flavours so braises and sauces.

🐄 You can only eat one meal for the rest of your life, what is it?

Beef stroganoff, going back to my childhood!

🌿 What is your best cooking tip for our members?

My tip is to keep it simple. Use good quality ingredients to make the dish buzz.

🥩 What is your signature dish?

It is hard to name my signature dish because there are so many I enjoy to cook but a dish I created for a degustation at Cocoas was always a favourite – eye fillet steak with lobster ravioli in a lobster bisque.

✔️ What is the best piece of advice you have learnt from your mentors?

The best piece of advice I’ve been given by my mentors is “keep it simple stupid” and “fat is for flavour”

🥩 You only have 3 ingredients that you can cook with for the rest of your life, what are they?

There are so many great ingredients, so it’s hard to pick just one! If I have to choose, it’s amazing what you can do with cheaper cuts of meat, herbs and stock.

👰 What is your favourite special occasion to cook for?

My favourite occasion to cook for would have to be weddings because I love seeing people happy with my food on their special day.

MEET TAHNEE – Front of House 

💛 A little bit about me – My name is Tahnee, I am a Stockton girl and I spend most of my time outdoors, mainly in the water, surfing and swimming. I love going travelling and on adventures.

🍽️ Favourite dish – Chicken Snitty!

🤑 If I won lotto – I would buy a house and travel

MEET MICK – Mechanic 

💛 A little bit about me – Michael is 53 years of age and is from Townsville but was born and bred in Coffs Harbour, until moving into the defence force for 23 years. Michael or Mick as he is often called, started as an apprentice mechanic with the defence force which took him all over the country as well as a stint in Afghanistan for 6 months in 2008. Michael is married to Karen and has a daughter called Isabel who is14. Karen and Isabel will join Mick in Coffs Harbour at the end of the year. Mick’s hobbies outside of work include fishing, camping/caravanning, restoring old furniture and renovating his old Queenslander style home in Townsville.

🍽️ Favourite dish – My daughter’s Chinese chicken and almond

🍷 Favourite drink – Jack Daniels or red wine preferably a Cabernet Sauvignon

🎵 Favourite music – Anything by Polka

🤑 If I won lotto – I would buy a house in Coffs but I would still keep working

😂 What makes you laugh – Very little at times

🐶 Do you have any pets – I have a 3-year-old Maltese Cross Toy Poodle called BOO

👨‍🔧️ Years in the industry – 18 months in golf and 35 years as a mechanic

😍 Who has been the most influential person in your career – My wife, she has put her career on hold all our marriage so I could pursue mine

😃 What are your best attributes in the work place –  I turn up and I am easy to get along with
